Requirement
The excellent success of Gran Moravia in Italy and abroad quickly increased overall production to nearly 350,000 wheels per year. By 2010, the company recognized the need for a new, modern warehouse dedicated to aging the cheese. “Gran Moravia acquires its unique characteristics through natural transformation processes during the resting and maturation period,” explains President Roberto Brazzale. “During this phase, we need ideal conditions of temperature, humidity, and air circulation, as well as regularly, precisely, and effectively turn and brush the wheels.” It became clear how technology could maximize the result.
